I am the head cook for the Funny Farm BBQ Team participating in BBQ contests in the midwest. Specialize in Beef Brisket, Pulled Pork, Baby Back Ribs, and Chcken Legs. We utilize a special wood and charcoal mix to smoke all our meats and specially prepare the meat before smoking to add taste and tenderization. We incorporate a variety of hand-made injections, rubs, schmears, glazes, and sauces during smoking and have home-made sauce on hand for extra flavoring to address individual pallett desires.
